Mom's Banana Bread

Prep Time: 20 - 30 minutes
Cook Time: 55-60 minutes
(Total time will vary with appliance and setting.)
Level of Difficulty: Easy & Healthy

1/2 cup egg substitute or egg whites
1/4 cup melted trans-fat-free margarine
2/3 cup sugar
1/3 cup skim milk powder (dry)
1 1/4 tsp baking soda
1/4 cup fat free plain yogurt or buttermilk
1 cup whole wheat flour
1 cup white flour
1 1/2 cup mashed banana (about 3 large, very ripe)
1/2 cup walnuts (optional)

In small dish, mix soda and yogury. Set aside.
In a medium bowl, mix egg substitute, melted margarine, sugar, milk powder and soda dissolved in yogurt.
Stir in one cup of flour and mix thoroughly.
Add mashed banan, remaining flour and walnuts.
Mix until well moistened.
Place in loaf pan sprayed with non-stick vegetable spray.
Bake at 350 for 55-60 minutes.
Yields 18 moist and delicious slices.
