Pumpkin Fruit BreadPrep Time: 20 - 30 minutes Cook Time: 50 minutes (Total time will vary with appliance and setting.) Level of Difficulty: Heart Healthy Recipes 4 cups flour 3 tsp. Baking Soda 2 tsp cinnamon ½ tsp. ground pumpkin pie spice 2/3 cup canola margarine ¾ cup brown sugar 2/3 cup egg substitute 1/3 cup applesauce 1 15-oz. can pumpkin 1 tsp. vanilla 1 cup low fat milk 1 cup dried cranberries * ½ cup finely chopped dried apricots * 1 cup walnuts or pecans In small bowl mix flour, soda, cinnamon, and pumpkin pie spice. In large bowl cream margarine and sugar together until fluffy. Beat in, egg substitute, applesauce, pumpkin and vanilla. Stir dry ingredients into pumpkin mixture, alternately with milk, stirring until blended after each addition. Stir in cranberries, apricots and nuts. Pour into 2 loaf pans and bake 50 minutes at 350 degrees or until toothpick comes out clean. Turn loaves onto rack and cool. *Plump cranberries and apricots by covering in hot water. Microwave 1 minute, drain, and add to batter.
