Lemon Zest Vinaigrette

1/2 cup extra virgin olive oil
1 oz Champagne vinegar
1 Tbs. honey
3 lemons (juice and zest)
1/2 tsp. ground black pepper
1/2 of large shallot
1/2 Tbs. kosher salt


Pull all ingredients in blender EXCEPT the olive oil, which you will use to emulsify the vinaigrette. Start blender, once ingredients are combined, drizzle in the olive oil until mixed. Refrigerate.

Makes 8, 1 Tablespoon Servings.
Dressings should be used sparingly, as oils are the source of significant calories. Each serving of the above is approximately 200 calories.
While the extra virgin olive oil is high in calories, it is a monounsaturated fat, so is a good oil choice.
