Dianne's Molasses Bran Muffins

1 ¼ cups whole bran cereal ¾ cup unbleached white flour
½ cup boiling water ½ cup whole wheat flour
1 beaten egg or 1 ¼ tsp. baking soda
¼ cup egg substitute ½ tsp. cinnamon
1 cup buttermilk ½ cup raisins/dried cranberries
½ tsp. vanilla (plumped in boiling water)
1/4 cup oil
1/3 cup molasses
In a small bowl, combine ½ cup of the bran cereal with boiling water. Set aside to cool. In a large mixing bowl, combine egg, vanilla, buttermilk, molasses, oil, and remaining ¾ cup of bran cereal. In third bowl, combine flour, baking soda, and cinnamon.
Stir into buttermilk mixture; stir in cereal and water mixture. Add raisins. Spray muffin pan with non-stick coating.
Fill 14 to 16 muffin cups 2/3 full. Bake at 400 degrees F for 10 minutes. Cool 2-3 minutes. ENJOY!
