Salmon with Pineapple Chutney
Prep Time: 15-30 minutes
Cook Time: 15 minutes
(Total time will vary with appliance and setting.)
Level of Difficulty: Easy & Healthy
1/2 fresh pineapple (chopped)
1/4 cup light brown sugar
1/8 cup oranje juice
1/8 cup raisins
1/8 cup chopped red onions
For Pineapple Chutney:
In a sauce pan, combine all ingredients.
Bring to a boil and simmer for 3 minutes.
Allow to cool.
Place filets on baking sheet or grill.
Cover with about 2 Tbs. of the chutney.
Bake at 375 for 15 minutes or grill on medium until salmon is done.
Serve with brown rice, quinoa or over fresh greens.
