Summer Orange SaladSummer Orange Salad

Sliced Oranges
Spinach or Leafy Greens
Vinaigrette Dressing (homemade or pre-bottled)
Optional: Low fat feta cheese, pecans, dried cranberries

Place orange slices on the plate lined with leafy greens or spinach. Top with an avocado ring and strawberry halves and add some pecan pieces and cranberries. Sprinkle with a vinaigrette dressing. Garnish with low fat feta cheese if desired.
To make your own vinaigrette simply drizzle a tiny bit of Smart Balance Omega Oil and balsamic vinegar.
To Complete the Meal add a small grilled sirloin with roasted red potatoes or low-fat potato salad.
