Old Fashioned Frosted Carrot CakePrep Time: 20 minutes Cook Time: 30 - 35 minutes (Total time will vary with appliance and setting.) Level of Difficulty: Heart Healthy Recipes Cake Ingredients 1 ½ cups All-purpose flour 2/3 cup Whole wheat flour 2 tsp Baking soda ¼ tsp Salt (optional) 2 tsp Ground cinnamon 1 cup Packed brown sugar 1/3 cup raisins ¾ cup egg substitute egg white ¾ cup nnfat buttermilk 8 oz crushed pineapple 2 tbsp vegetable oil 2 tsp vanilla 2 cups shredded carrots Non-stick spray Cream Cheese Frosting Ingredients 8 oz Low fat cream cheese 1 tsp Vanilla 1 cup Powdered sugar 1 tsp Grated orange rind Combine flours, soda, salt, cinnamon, brown sugar, carrots, and raisins. Set aside. Combine egg substitute, egg white, buttermilk, pineapple, oil and vanilla in a large mixing bowl. Add dry ingredients to egg mixture, stirring until well blended. Coat a 9x13x2 inch pain with cooking spray. Put batter into pan and bake at 350 degrees F for 30 to 35 minutes. Cool on a wire rack, then spread with cream cheese frosting. For Frosting: Beat cream cheese in a small mixing bowl until creamy. Gradually add powdered sugar, beating until blended. Stir in vanilla and orange rind. Spread on cooled cake.
