Sunrise Honey Bran Muffins

3/4 cup crushed All Bran Complete Flakes or oat bran cereal flakes
10 oz non-fat plain yogurt
1/4 cup egg substitute or 1 whole egg
1/3 cup honey
1/4 cup canola oil
1 teaspoon vanilla
2/3 cup plumped cranberries/raisins (cover with water and heat 1 min; drain)
1 cup shredded carrots
1 ¼ cup enriched flour
1 ¼ teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 cup slivered almonds/walnuts
In medium bowl, combined crushed bran, yogurt, egg substitute, honey, oil, vanilla, cranberries and carrots. Let stand 15 minutes. *It takes about 1 ½ cup All Bran Complete Flakes to provide ¾ cup crushed. Place in a plastic bag and crush with a rolling pin.
In a large bowl, combine remaining ingredients. Make a well in the middle and add bran mixture and nuts.
Stir until just moistened. Do not over mix.
Spoon batter into 12-16 muffin cups coated with no-stick spray or paper liners.
Bake at 400 degrees F for 15 minutes.
Makes 18 muffins.
