6 medium skinless chicken thighs
8 oz sliced fresh mushrooms - 1 pkg.
¼ cup water
1/2 cup sliced green onion-1 inch pieces
¼ tsp. salt
1/3 cup dry Marsala or golden cream sherry
2 TB lite butter with canola oil
Nonstick spray coating or olive oil
Spray a large skillet and medium skillet with vegetable coating.
Add 1 TB olive oil to large pan. Add chicken thighs.
Cook over medium heat until no pink remains and internal temperature is 160 degrees F. Turn heat to low. While chicken is cooking, take medium skillet and add 2 TB lite butter and mushrooms.
Cook over medium heat until mushrooms are tender and most of the liquid has evaporated (about 3 minutes).
Add onions, water, sherry and a pinch of sea salt. Simmer a few minutes.
Pour mushrooms mixture over chicken thighs.
Simmer for a few minutes and serve over whole grain fettuccine noodles or brown rice.
